Vegan Coconut Pineapple Rice
While this recipe may look somewhat plain, it is anything but, and speaks for itself once tasted. It is very versatile, and it is fun to experiment with different toppings and pairings, such as avocado and fresh salsa or a creamy cashew sauce.
Serves 8 to 10
- 3 cups brown rice
- 4 cups light coconut milk
- 2 cups vegetable broth
- 1 cup pineapple, diced
- 3 figs, diced
- 1 tsp red pepper flakes
- In a large pot, add brown rice, coconut milk, and vegetable broth and bring to a boil.
- Add finely chopped pineapple, figs, and red pepper flakes.
- Reduce heat to simmer for 30 minutes or until rice is tender.
- Serve warm.
